Primary fields of research

My research focuses on assessment of food quality and nutritional value. I am interested in discovering food molecular composition (foodomics) and its impacts on human health through untargeted molecular screening of bio-fluids (metabolomics). To improve molecular screening methods my team works towards (1) optimization of standard operating procedures, (2) development of new (efficient) algorithms for processing raw instrumental data to generate informative metabolite data, and (3) extraction of information from complex omics data using multivariate data analysis (chemometrics). Three types of analytical techniques I use include high resolution liquid state NMR spectroscopy, GC-Tof-MS and LC-QTof-MS. More information can be found at www.food.ku.dk/foodomics.
