I am studying the functional properties of Lactic Acid Bacteria isolated from the environment and foods, with special attention to Carnobacterium maltaromaticum. Their ability to produce bacteriocins and other antimicrobial compounds against bacterial pathogens and potential application as food preservatives or probiotic cultures in aquacultures will constitute important parts of my PhD project.
