Primary fields of research

My PhD research is within the field of food physics and my main focus is to elucidate molecular interactions between specific plant proteins and milk proteins and how these interactions can be used to control the functionality of complex food matrices. My PhD study is part of an interdisciplinary research project called HAPFAM - Healthy and Affordable Protein rich Foods for African Markets (www.hapfam.ku.dk).

  • Rheology and microstructure
  • Gelation of mixed protein systems
  • Interactions between plant and milk proteins
  • Food Ingredient Functionality

Supervising MSc students and designing projects in the following courses:

  • Food Texture and Functionality
  • Milk processing

Supervision of MSc thesis and internship projects within my research area
