My interests are centred on natural chemical constituents in living organisms and their interaction with other organisms. Molecular structure, concentrations in plant organs, metabolism in humans and animals and effects on these are study areas. I also study the influence of food processing on the concentration and molecular structure of toxic food constituents, especially the influence of fermentation. Chemical analytical methods are developed as needed. Present research is among others about natural toxins as well as pesticides and mycotoxins in plant foods in (e.g. cassava).
