I am an Assistant Professor in the Department of Food and Resource Economics at the University of Copenhagen. Prior to this, I worked as a postdoctoral researcher at three different universities in Denmark and Iceland: the University of Copenhagen, Aarhus University, and Reykjavik University. I earned my PhD in Environmental and Resource Economics with a concentration in food and consumer economics. My PhD research specifically focused on investigating consumer behavior in relation to novel, sustainable, and healthy foods.
