- Characterization of complex microbial communities of fermented foods (e.g. dairy and plant-based fermented foods) and gut microbiome
- Genetics, physiology and metabolism of lactic acid bacteria (e.g. SLAB and non-SLAB)
- Biology, detection and biotechnological properties of bacteriophages (LAB and nonLAB)
- Computational microbiology tools, multivariate data analysis, and data integration
- Bioinformatic workflows for analysis of sequencing data (amplicon and shotgun metagenome), and high-performance computing (HPC)
- Omics- (MNR, GC-MS, spectroscopy) applications to understand/optimize fermentation processes
