My research is focused on understanding the behavior of food borne bacteria that cause disease in humans. Particularly I am interested in the determining the genes that are required for the bacteria to persist and survive in food and food processing systems as well as the genes that contribute to virulence of the organisms. Also the regulatory mechanisms that allow persistence and virulence are important aspects of the research. An additional level is focused on developing appropriate food model systems, which allow us to perform studies of bacteria in a controlled environment that mimics the natural habitat of these bacteria. A common research theme is the response of pathogenic, food borne bacteria to changes in environmental conditions such as the shift from a food product to the human host and the regulatory mechanisms that are able to sense and elicit a response to such changes.
